Blueberry Baked Oatmeal

One of our favorite breakfasts year round is baked oatmeal. It is often filled with the fruit of the season, however Blueberries are ALWAYS a must no matter the time of year. These juicy, bursts of sweetness are the perfect pairing with oats, nuts and of course lots of cinnamon. A nutritious and belly-filling way to start any morning, this blueberry baked oatmeal recipe is one you’ll want to add to your weekly meal plan.

The Recipe: BLUEBERRY BAKED OATMEAL

1 egg, beaten

1/3 c. coconut oil, melted(any oil will work)

1/3 c. honey

2 c. old fashioned oats

1 1/2 tsp. baking powder

1/2 tsp. salt

1/2 c. almond milk (any milk will work)

1/4 c. unsweetened coconut flakes

1/2 c. chopped apple, peeled

2 c. blueberries, fresh or frozen

1/2 chopped nuts

1 tsp. cinnamon + more for sprinkling over pan

Preheat oven to 350 degrees. Whisk egg, oil and honey in a bowl. Mix in oatmeal, baking powder, salt, milk, coconut flakes, apple, blueberries, nuts nuts and cinnamon. Mix together well. Pour into greased 8x8 pan; sprinkle with extra cinnamon if desired. Bake for 25-30 mins, or until oatmeal is set.

We love to serve ours with fresh fruit, drizzled nut butter and added milk.

NOTES:

-sub 1/2 cup steel cut oats for old fashioned

-can add 1 T. flax meal for extra hidden nutrition

-I usually use almond milk, but any preferred milk works great

-in our opinion, plenty of cinnamon is the perfect pairing with blueberries

-any variation of berries/fruit will work instead of the apples or blueberries, although i can assure you that you won’t want to replace blueberries (:
